Dietitian's Pick: Granola Bowls with Fruit and Yoghurt
Serves: 8 (makes 8 bowls) Time to make: 30 mins

Ingredients
2 tablespoons no-added-salt, no-added-sugar smooth peanut butter
3 tablespoons maple syrup
1 tablespoon olive oil
1 teaspoon vanilla essence
2 cups quick-cook oats
1 banana, mashed
1 cup reduced-fat plain yoghurt, to serve
2 cups fresh fruit (such as berries, banana, apple and kiwifruit), to serve
Instructions
Step 1
Preheat oven to 180°C. Lightly spray 8 holes in a 12-hole muffin tin with oil.
Step 2
Heat peanut butter and maple syrup until melted. Stir through oil and vanilla essence.
Step 3
Mix oats, banana and melted peanut butter mixture in a large bowl until well combined.
Step 4
Press 1 tablespoon of the mixture into each muffin hole, making sure the base is fully covered and there are no gaps.
Step 5
Bake for 15 minutes, or until golden. Remove from oven and leave to cool for 5 minutes. Carefully turn out on a wire rack to cool completely.
Step 6
Serve granola bowls filled with yoghurt and your child’s favourite fruit.
